WI would be #1 on the list for me if you want some land and still not be too far from a decent city. Crime is low, jobs are okay but the education level is not the highest. You would also need to be able to take a very cold winter.
There are parts of Nevada where you could get 10 acres and horses about an hour outside of Vegas. However crime is higher and it gets really hot in the summer. Good Luck!
